Custom plancha grill for Allen’s Table with charcoal infrared grilling and precise thermal architecture

This project is a fully custom development for Allen’s Table in Wollerau. The goal was a professional plancha grill able to cook premium ingredients through charcoal infrared grilling, transfer strong roasting notes into the food and deliver a technical as well as visual standard at the highest level.

For that reason, this plancha grill was never treated as an off the shelf product. It was developed as an integrated part of a gastronomic concept. The system is designed to cook food through charcoal infrared heat, generate distinct roasting aromas and provide calm, controlled thermal behaviour across the full working surface.

Technical and material qualities of this system

Consistently premium stainless steel

The entire grill is fabricated in stainless steel 1.4404, including zones without direct food contact. Every component in contact with food is executed in stainless steel 1.4571. This creates maximum material consistency, corrosion resistance and a quality standard clearly above ordinary commercial kitchen solutions.

Real working surface for professional use

With a cooking area of 1000 × 400 mm, the system is built for real performance. The geometry supports productive use during service while providing enough area for controlled heat flow, clean handling and repeatable culinary output.

Swiss fabrication at the highest level

The entire construction is engineered and manufactured in Switzerland. This is reflected not only in execution quality, but in the combination of engineering depth, detailing, fabrication discipline and visual precision.

Thermal architecture powered by Revolit

The thermal architecture and therefore the efficiency of the plancha system were achieved through Revolit Class I. At the same time, the architecture remains adaptable towards future upgrades, especially in the direction of Class V RevoCORE. The result is a system that is not only high performing today, but strategically upgradeable tomorrow.
